Søndagsskolen # 9 - Lær at lave Vild Vin med Henno

A practical introduction to fermentation, seasonal plants and wild wine making with a tasting of 3-4 of Henno’s own wines. What will we learn? Henno will share his story, thoughts, and philosophy behind wild wine making, and introduce his vision about how to harvest fruits and herbs in season approaching the landscape with curiosity, appreciating whatever nature has to offer, may it be dandelion, rhubarb or bird cherry blossom. Following we will move into the practical method that goes into wild wine making focusing on step-by-step fermentation methods, identifying and picking wild plants, searching for wild yeast and the use of simple equipment for wine making. Everyone will get their hands in the fruit and taste buds stimulated! Who will we learn from? Henno Matzen is an organic farmer, chef, forager and natural winemaker. He has spent several years mastering the flavors of wild plants and experimenting with wild fermentation and preservation. He has traveled around the world as an organic farmer, learned from the legendary forager Roland Rittman and worked in renowned kitchens such as Dragsholm Slot, Stedsans in the Woods and Knystaforsen. Today Henno is living with his partner Henriette at Fejø where they make wild wine in their own winery at Storemosegaard. By the end of the day… By the end of the afternoon we will taste 3-4 of Henno’s own wild wines and share reflections upon the learnings of the day and the impressions we have had. Henno will also gift all participants with notes around the wild wine method. No prior skills are required to attend as long as you bring curiosity and a love for natural wine.Søndagsskolen will be outside so please dress for fall weather and the teaching will be in Danish. Søndagsskolen is a recurring informal school at Alle Tiders. Every month we invite a talented artist, farmer, chef, communicator or craftsperson to teach us something new about the world around us.
